Recipes for Dotorimuk-kimchi pancakes

October 4, 2013

Ingredients (to serve four people)

You will need 1 cup, or 100 grams of kimchi, one third of an onion, 200 grams of dotorimuk or acorn jelly, 1 cup of “buchim garu” or wheat flour seasoned for pan frying. You will optionally need two spoonfuls of grape seed oil.

For sauce, you will need one spoonful of soy sauce, a half table spoon of vinegar and a spoonful of water.

Step by step

1. Shake off the seasoning from kimchi and soak kimchi in cold water for 30 minutes. Dehydrate it and slice it.

2. Finely slice onion.

3. Completely mash dotorimuk. Mix it with a half cup of water, buchim garu, kimchi, onion and grape seed oil, and knead them. The oil will make the pancake crispier.

4. Grease the pan with a spoonful of vegetable oil and pan fry the dough back and forth. Serve with the sauce.

Tips

Dotorimuk has acornic acid, which gets rid of the heavy metals in the body. It is light on the stomach, good for recovery from fatigue and strengthens vessels. However, too much intake can cause constipation.
